Omelet Inside a Pepper Ring: I've Succumbed to the Pinterest Peer Pressure






You guys! I have succumbed to the Pinterest peer pressure.

I'm not even kidding. You know those zillions of pins with eggs cooked inside the pepper rings?

I've seen them everywhere. Even my twin sister made them.

Keep in mind, I've never even tried to smoke a cigarette. Not to mention I hardly drink and have never tried any illegal substances. I can say NO easily to many things that others crumble upon.

But when it came to eggs cooked in pepper rings, I was weak.

Please forgive me ;)

I made a few changes to my version of this dish: I cooked the peppers on one side first and I whisked the eggs before pouring them into the rings.

Although some of the egg mixture leaked a bit, I think this was a pretty successful breakfast. And, this gives me an opportunity to share with you this cute little ceramic egg holder I bought at Marshalls: $2.99!



Omelet Inside a Pepper Ring
{These are not exact measurements. You basically probably want two eggs per person and about 3 pepper rings per person.}

Ingredients
peppers, cut into 1/4" rings
olive oil
eggs
milk
salt & pepper
Southwestern spice
tomatoes, chopped
cilantro, chopped


Directions
1. Heat oil in a non-stick pan. Add pepper rings and cook them for a few minutes.
2. In the meantime, whisk together the eggs, milk, salt & pepper and Southwestern spice.
3. Turn the pepper rings over and carefully pour the egg mixture to fill them.
4. Cook slowly covered until the eggs are set.
5. Don't worry if some of the egg mixture "escapes."
6. Serve with tomatoes and cilantro.

you know what's weird? i was going to make these for dinner tonight! i'm making the for dinner instead with some quinoa tomorrow -- how many rings do you think you can get from one pepper? we have two peppers and a bunch of eggs to use up!

I love prop shopping at Marshall's! I always find a million awesome things there. I might succumb to these too.. They're so cute and I love peppers.

I would love to try this but my children don't like peppers. Which other vegetable could I use? Do you think it would work with hollowed out rings of a large tomato?

I think tomatoes might be too mushy for this, but you could give it a try. If not, you can always just use bread ;)

Oh, yeah, the peer pressure. I finally succumbed today and tried grilling avocado. It was good but I think I like it fresh better. This is next on my list. Gotta love pinterest!

I agree re grilling avocado. I tried grilling watermelon and really hated it.

I don't like bell peppers in my omelets so this recipe is so not for me. On occasion I cut out a round from a slice of bread and fry eggs in the hole. What's that called again...?
