These Rhubarb and Custard Crumble Muffins are packed full of seasonal rhubarb, custard in the batter and finished off with an oaty streusel!
The added almond flavour marries very well with the tartness of the rhubarb. If you wish to use cow’s milk simply substitute it.
Slightly tangy and not overly sweet, light and fluffy rhubarb cake with hint of cinnamon! Perfect with a cup of tea!
